corn chowder recipe

I just tried this amazing crockpot recipe.  Bacon corn chowder.
It was amazing and So easy to make!

Bacon Corn Chowder Recipe
Ingredients

1 Onion chopped
4 lrg Carrots peeled and chopped
4 Potatoes peeled and chopped
1 can corn
1 can creamed corn
salt and pepper and some basil and parsley to taste
8oz of chicken broth
2 tablespoon flour
1/2 pint of half and half
package of bacon cooked and chopped

directions:
Add all to crockpot onion,potatoes,carrots, corn, (cream and regular)seasonings, chicken broth, half the bacon.  cook on high for 3-4 hours until potatoes and carrots are tender. Add the rest of the bacon and flour and half and half and to make it creamy, let cook for 30 minutes and serve.

Best Bread Pudding recipe to date

Found this gem on Pinterest.... Ashlee and I had to try it out!!

sweet potato muffins

mmm. Sweet Potato... I love them and had some left over from a holiday pancake recipe and Ashlee wanted to use them so we found this via Pinterest and www.feedmeimhungry.com
Sweet Potato Muffins

Ingredients
  1. 1 cup of mashed sweet potatoes (You will need 1-2 fresh sweet potatoes depending on the size to get 1 cup of mashed sweet potato.)
  2. 1/2 cup whole wheat flour
  3. 1 and 1/2 cup white flour
  4. 1 stick of butter softened
  5. 1 cup of sugar
  6. 1/4 teaspoon of salt
  7. 3 teaspoons baking powder
  8. 3 eggs
  9. 1 teaspoon cinnamon
  10. 1 teaspoon nutmeg
  11. 1 teaspoon vanilla extract
  12. 1 cup of pecans
To Prepare the Sweet Potatoes
  1. 1. To prepare the mashed sweet potatoes, Set a small pot of water to boil. Meanwhile peal the fresh sweet potatoes. Place the sweet potatoes in the pot and cook until completely tender. Drain and mash the potatoes using a fork or potato masher.
For the Muffins
  1. 1. Preheat oven to 350*. Grease and set aside 12 cup regular sized muffin pan. In the mixing bowl of a large stand mixer combine mashed sweet potatoes, whole wheat flour, white flour, butter, sugar, salt, baking powder, eggs, cinnamon, nutmeg, and vanilla. Mix until well combined. Pause and scrape down sided of bowl with a rubber spatula at least once.
  2. 2. Fold in pecans.
  3. 3. Distribute batter evenly between the 12 muffin cups. Each cup will be about 3/4 full. Bake on 350* for 45 min. or until a toothpick inserted in the center of a muffin comes out clean. Allow to cool for 10 min before removing muffins from the pan.
Notes
  1. If you love sweet potatoes and want to bump up that flavor omit one egg from the recipe, add an extra 1/2 cup of sweet potato, and use only 1/2 teaspoon of cinnamon and nutmeg.

Homemade garden recipe

Nothing taste better than homemade !!!
I found a recipe on Pinterest for crockpot marinara!! So easy and so fun!!


Then I added some of my own items, all things from my garden , basil, chives, onion, tomatoes, garlic and lots of oregano and seasonings.  
Put everyone thing in skins and all and let cook on high for 6-8 hours stirring every hour or so... Then once all cooked down you can run through the food processor.

Pumpkin carving and Roasted Pumpkin seeds

The I LOVE fall and all the great things that come with it... the colors, the pumpkins, the carving and all the great Family time! Today we decided it was finally time to carve pumpkins and I also wanted to try roasting some pumpkin seeds....



things you will need for Roasting pumpkin seeds:

1. Fresh pumpkins, clean out the goo and separate the seeds (this is longest most time consuming part)

Happy Father's Day

This Father's Day was spent at a softball tournament. 

The girls played great!! And won a couple games and the. Lost one and for rained out in the last. 

Overall they played AMazing!! So proud!!

They got 2nd out of 9 teams. !! Way to go!


Plus the kids made their version if Monte Cristo sandwhich for Dad's Day Dinner!

Sunday Brunch!

I am not a big cook but I do enjoy the Sunday morning recipe for a family brunch.  Today's recipe is.....
one of my favorites ...German Pancake with fresh Strawberry!
This is the recipe for the pancake... very simple... and the strawberries are just fresh and cleaned and cut up to your liking :).
 after mixing and adding into the butter bake dish... pop in the oven and watch it RISE....


 Our pancake rose so high this morning that some of it broke and fell !!... still tastes great!

we have it sliced and ready to serve... MMMMmmmmm enjoy!

Salad
  • 1 romaine lettuce heart
  • ½ c. BBQ shredded chicken
  • ½ pear, sliced
  • ¼ c. Gorgonzola cheese, crumbled
  • ¼ c. chopped walnuts
Dressing
  • ⅓ c. olive oil
  • ⅓ c. cider vinegar
  • 2 Tbsp. honey
  • 2 Tbsp. Dijon mustard
  • ½ tsp. minced garlic
  • ¼ tsp. onion powder
  • ¼ tsp. rubbed sage

Snowy Day desserts

On those quiet snowy days when going out for dessert is just not an option... I start browsing Pinterest to see what I can make from ingredients already in my cupboards.


This is what won!!

Ingredients:
2 sheets pre-made frozen puff pastry, defrosted

2 tablespoons butter
4 apples, cored, peeled and sliced into 1/8” thick slices

2 teaspoons flour
1/2 teaspoon cinnamon

¼ teaspoon nutmeg
¼ cup sugar
¼ cup plus 2 tablespoons fresh orange juice
dash salt

1 egg, beaten
Instructions:
Preheat oven to 400°F.
Lay the pastry on the floured counter and roll out to two 10” squares. Cut each square into four 5"x5"squares. Set aside.
In a skillet, heat butter over medium-high heat. Add apples, flour, cinnamon, nutmeg, sugar, orange juice and salt. Sauté 3-4 minutes, until apples are crisp-tender (NOT soft- they will continue to cook in oven) and juice has slightly thickened into a caramel-like sauce.


Divide apples up evenly for the 8 turnovers. Spread apples across the center of each pastry square followed by a little of the sauce drizzled over the top of apples. Dip fingers in water and rub along the edges. Fold the top edge over the bottom and press to seal the edges. Brush the tops lightly egg wash. Repeat with the other squares.

Bake for about 15 minutes, until golden and puffed. Can be served hot or cold.

Stuffed Acorns!!

Stuffed Acorn squash that is!!!
Found some ideas on Pinterest and this is just a little concoction I came up with.
Cut the squash in half and bake at 350 for 40 minutes or in microwave cook for 10 minutes (I put on a plate or dish with some water face down.)
In the meantime I made some brown rice (steamed) and cooked ground turkey and scallions and some corn in a pan with salt, pepper, season to taste.
Once squash is cooked spoon out some to make room to stuff .. Take ground turkey mixture evenly spoon into squash bowls and over the top add spaghetti sauce and bake for additional 20 minutes at 350.
Take out of oven, let cool a little, And you are ready to eat!!

Thanksgiving PUMPKIN bar recipe

Ever since I met the Porteous family and now that I am a part of their family I remember one great thing around the holidays!  Pumpkin Bars.... I enjoy making them more than I enjoy eating them anymore... so I thought I would share the recipe and some thoughts with you......
Pumpkin Bar
Bars:  4 eggs
1 2/3 cups granulated sugar
1 cup vegetable oil
15-ounce can pumpkin
2 cups sifted all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
Icing: 8-ounce package cream cheese, softened  1/2 cup butter or margarine, softened  2 cups sifted confectioners' sugar  1 teaspoon vanilla extract
Directions Preheat the oven to 350F.
Using an electric mixer at medium speed, combine the eggs, sugar, oil and pumpkin until light and fluffy. Stir together the flour, baking powder, cinnamon, salt and baking soda.


Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth.
Spread the batter into a greased 13 by 10-inch baking pan.
Bake for 30 minutes. Let cool completely before frosting. Cut into bars.










To make the icing: Combine the cream cheese and butter in a medium bowl with an electric mixer until smooth.Add the sugar and mix at low speed until combined. Stir in the vanilla and mix again.
 This is the Best part......



Spread on cooled pumpkin bars.


Finally.....taste them!!!!!!!!




Oh yeah!!!! that's goooooooood!
