Thanksgiving PUMPKIN bar recipe

Ever since I met the Porteous family and now that I am a part of their family I remember one great thing around the holidays!  Pumpkin Bars.... I enjoy making them more than I enjoy eating them anymore... so I thought I would share the recipe and some thoughts with you......
Pumpkin Bar
Bars:  4 eggs
1 2/3 cups granulated sugar
1 cup vegetable oil
15-ounce can pumpkin
2 cups sifted all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
Icing: 8-ounce package cream cheese, softened  1/2 cup butter or margarine, softened  2 cups sifted confectioners' sugar  1 teaspoon vanilla extract
Directions Preheat the oven to 350F.
Using an electric mixer at medium speed, combine the eggs, sugar, oil and pumpkin until light and fluffy. Stir together the flour, baking powder, cinnamon, salt and baking soda.

Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth.
Spread the batter into a greased 13 by 10-inch baking pan.
Bake for 30 minutes. Let cool completely before frosting. Cut into bars.

To make the icing: Combine the cream cheese and butter in a medium bowl with an electric mixer until smooth.Add the sugar and mix at low speed until combined. Stir in the vanilla and mix again.
 This is the Best part......

Spread on cooled pumpkin bars.

Finally.....taste them!!!!!!!!

Oh yeah!!!! that's goooooooood!

Turkey Trot!!!

Turkey Trot!!! A 4 mile run fundraiser for the Oregon ZOO!

The Nagging thought on the eve before our race...." we are going to be completely miserable and get SOAKING wet"!!. But this morning at O'dark 30 there was NO rain! Yeah!

This was Ana's first race ever and I was hoping that it did not turn out to be a flop and miserable.  Because I always love to have more runners!

I wish I could show you all a map of the course but if you know the area around the ZOO it is HILLS everywhere!  Start at the forestry center and head to the Japanese Garden parking lot... The first half of the race went pretty well and pace was good too, but after the halfway point it was a out and back course and what was downhill there was a BIG hill back.... so our pace slowed.... but we made it to the end at the bottom of the zoo down on the concert lawn.  I was SO happy to see that we did it in 45 minutes! For being cold, not very well prepared and Ana's first race, we did GREAT!!!  ( and there was NO rain)!!

Thank you thank you! and EAT lots of turkey!!

  • 1 tablespoon(s) Light-Brown Sugar

  • 1 1/4 teaspoon(s) Salt
  • 1/8 teaspoon(s) Cayenne Pepper
  • 3/4 cup(s) Pumpkin Puree
  • 4 ounce(s) Shredded Sharp Cheddar
  • 1 tablespoon(s) Unsalted Butter, softened, for buttering pan
  • 1 large Egg, lightly beaten with 1 teaspoon water

Directions
  1. In a large bowl, stir together 3 1/2 cups flour, brown sugar, yeast, salt, and cayenne. Add 1 cup water, pumpkin, and cheese; stir to combine. (Dough will be slightly sticky.)

Roll dough into a log and place seam-side down in loaf pan. Cover loosely with plastic wrap or a kitchen towel and let rise at room temperature until almost doubled in volume, 1 to 1 1/4 hours.

Preheat oven to 375 degrees F. Using a sharp knife, slash loaf down center. Brush loaf with egg wash.

  1.  Bake until loaf sounds hollow when tapped, 40 to 50 minutes. Turn out of pan onto a wire rack to cool.
